Three Veg Samosas

Perfect for eating hot or cold, these flaky little pastry packages contain an Indian inspired filling with peppers, courgettes and, of course, piquant pickled onions. Makes 10 samosas. 
  1. Pre-heat oven to 220 C/Gas 7
  2. Heat a drizzle of rapeseed oil in a pan and sauté peppers and courgette quickly over a high heat. Set aside in a bowl. Stir in herbs, pickled onions and 3-4 tbsp of chutney to taste
  3. Unwrap filo pastry and prepare for filling by cutting the filo sheets in half then half again to form 4 strips
  4. Brush top layer lightly with oil/butter
  5. Place a spoonful of filling at one end and fold over to edge to form a triangle. Fold straight towards top of strip and then over to side again. This zig-zagging effect will result in triangular samosas
  6. Continue until strips and filling used up. Wrap up any remaining pastry in cling film and freeze for another day
  7. Finally brush the parcels with oil/ butter to glaze
  8. Bake for 5- 8 minutes until pastry golden
  9. Tasty warm or cold
