Prawn and Sweet Onion Frittata

Thick wedges of this tasty omelette peppered with pickles, prawns and potatoes make the perfect summer snack. Garner’s Sweet Pickled Baby Onions are carefully chosen while small and tender to create a delicious tangy sweetness.
  1. Whisk the eggs in a bowl and add all remaining ingredients
  2. Heat oil in a large sauté pan and add omelette mix
  3. Pre-heat grill
  4. Drag a wooden spoon across the frittata a few times allowing liquid egg to fill in the base.
  5. Reduce to a medium heat and allow to cook without further stirring to allow eggs to set for 5 minutes or so until a golden tone on under side
  6. When fully set and still soft on top, transfer to the pre-heated grill to finish off top. The dish is cooked when the egg is set
  7. This makes a very thick omelette so serve in wedges, warm or cold
