Wednesday lunchbox – Nordic not Niçoise Salad

Serves 4
Our contemporary take on the continental Niçoise Salad.
  1. Ensure all greens are rinsed thoroughly in cold running water as appropriate to the ingredient prior to preparation.
  2. Tear the lettuce into manageable leaves.
  3. Peel and quarter eggs and set aside.
  4. Slice, dice or chop ingredients as you wish to creatively layer a beautiful salad on the lettuce leaves with the flaked fish and top with eggs and pickled onions.
  5. Drizzle with dressing just prior to serving.
  6. Serve with rustic bread to mop up dressing.

There is no tuna or olives in this alternative version - mackerel is delicious and sustainable and Garner’s Pickled Onions are the new Nordic olive!
