Friday – Cheese and Pickled Onion Pizza

Serves 2
The perfect Friday night pickled onion pick me up.

To make dough…
  1. Mix flour, salt and yeast in a mixing bowl. Make a well in the centre.
  2. Add warm water and oil. Mix to a soft dough, adding a little water if the mixture is too dry.
  3. Gather the dough together with your hand and knead on a lightly floured surface for 10 minutes until the dough is smooth.
  4. Meanwhile make sauce following the instructions in the recipe below.
  5. Divide the dough into 2 and shape into neat pizza bases. Place on baking tray dusted with flour and place in a warm – not hot – place to rise for 15 minutes if possible.
  6. Pre heat oven 220 C/Gas 7.
  7. Spoon sauce over pizza bases, leaving a rim. Add nuggets of cheese.
  8. Bake for approx 8-10 minutes until the top is bubbling and dough golden.
To make sauce...
  1. To make sauce, heat oil in a small pan and sauté onions quickly.
  2. Add remaining sauce ingredients and simmer gently for approx 5 minutes until the tomatoes are reduced and the sauce thickens. Set aside.
The sauce also works well with a bowl of pasta for an alternative simple supper.
